Time to Cook! Menu planning

I really try to plan my menu for the week. It’s so easy to get off track and then scramble for supper or eat out several times a week. So every few weeks, I plan out several weeks and then revise it weekly. 

I also made a menu board that I change weekly. It is a good reminder and then everyone else knows what we are having. 


Some recipes are new (Tuesday), some are old favorites (Monday) and we always do take out Thursday (grocery shopping day). It works well for us.

My second Covid vaccine

I received my second vaccine about 10 days ago. I didn’t have any issues with the first one so I didn’t think much about it. I had heard people did have a little more response the second time. 

I got my shot on a Thursday am. Felt fine all day. Woke up Friday and ran 7 miles. It wasn’t a great run. I got home, took a shower and then felt achy. I thought I was cold. But no, it was aches. Took some ibuprofen and felt a little better. All day, I was tired and achy. I just wanted to take a nap. I got home around 4, went upstairs to see L and promptly fell asleep for 3 hours. I woke up, felt a little better.  Went to bed at normal time and woke up Saturday just fine. 

And now I’m immunized!!!

Time to Read! Greenlights

I finished Matthew McConaughy’s new book, “Greenlights”. It was a good book about his life. I was really into his life story. He came from poverty, persevered even when things seem difficult. He’s lived a vibrant life but he definitely has his priorities together. Worth reading!

What’s Up With Us?

It’s been awhile since I’ve made a post so I have stuff to discuss! 

J: after a month long remote teaching, he went back into the school today. They still teach remote for 2 weeks, then have kids 4 days a week. 

L: still remote learning. I think she’s enjoyed having her dad home (I know all the pets have!) She may not like learning from home, but she’s kicking butt! 

K: still working. My schedule is picking up but I’m still leaving work at 5 pm most days which is delightful!  I read 96 books last year (I am quite proud of this!). 

Scully, AJ, Oreo,  Lucy and Diego are all doing well. They really are the winners of the pandemic.

Cheesy chicken pot pie. It was super simple. And delicious! Coupled with a Sumo orange and dinner was done.

My 2021 Word of the Year

I went back and forth about my word of the year. I’ve been doing this Ali Edwards word for several years. My good friend and I discuss it in December. And I had picked Sophrosyne. It means discipline. And I liked it but then it felt like work. Work to explain, to spell and it just didn’t fit right. So I paused and thought more. And suddenly it came to me.

Choose 

I want to grow this year. And it’s going to mean a lot of choices. I need to choose to keep myself accountable in my health goals as well as my financial goals. I choose to cast aside social media posts that anger me. And the list goes on. 

So I decided choose was a good solid word for me this year.

I See the Light at the End of the Tunnel.


Almost three weeks ago, I received my first Covid vaccine. I was giddy! I had some arm soreness the next day which lasted one day and then I was fine. I am so grateful to the scientists who created this vaccine. And if you’re an anti vaccine person, scroll through. I have zero tolerance for you. We as health care professionals have done more than you can imagine and my role is much less intense than my colleagues.  We need this vaccine. We want the world to go back to normal just like everyone else.

It’s Caturday 2021!

It’s a new year but let’s recap a little about the girls in 2020. 

They slept a lot. 
They stole the dog bed and claimed it as their own. 
They ate tons and tons of treats. 
They ran around like crazy women and sounded like elephants. 





But they are adorable and they are definitely keepers.

New Years Snow Run!!

My friend Stacy, texted me at noon asking if I wanted to run in the snow. She loves snow runs and so do I! We had so much fun!!! My calves were yelling at the beginning. I love my new shoes.
