Time to Cook on Tuesday

I'm trying out a new weekly post and on Tuesdays, I'm going to share one of my favorite recipes.  This one is Lauryn's favorite! She would love if I made it once a week.  It's super simple and one pan (which is the best) and takes less than 30 minutes!


Sausage and Spinach Pasta

1 smoked sausage or kielbasa, cut into 1/2 slices
1/2 c. onion, chopped
1 T. minced garlic
1 cup chicken broth
1 (10 oz) bag frozen spinach, thawed
1/2 cup heavy whipping cream
8 oz dry angel hair pasta


Cook the onion and garlic for a few minutes, until the onion is soft.  Add the sausage to brown. 
Then add the broth, cream and bring to a boil.  Add the spinach and pasta and cook until pasta is done.  Voila!  That's all there is to it.

Heartland 50k



Heartland 50k was my first ultramarathon. We trained in some gawd awful weather so we were hoping for the best! Here is the beginning when we were having fun! 



The sunrise was gorgeous. The weather and air were crisp. It was an out and back. The way out was fantastic. We walked up hills, ran the rest  and made it in 4 hours.  

The whole race was on a gravel road. Which wasn’t bad until we turned around. 
The way back was a TOTALLY different race. 40 mph winds. We tried running and our efforts were fruitless. So we walked the last 10 miles.  That was so hard! 

We did stop and let the friendliest horses!! They were excited to see us too! 


Here we are...done! Over 9 hours to finish but I am officially an ultramarathoner!
